Salaison artisanale du Lignon

In the village of Tence, this butcher’s and delicatessen works the old-fashioned way, buying its animals on the hoof from local breeders, thus promoting short circuits.

This local butcher in Le Chambon-sur-Lignon offers a selection of quality meats, highlighting the region’s cattle breeds: Fin Gras du Mézenc PDO meat (refer page), local meats and poultry. Meals-on-wheels delivery all year round (professional or private). Banquets, seminars, weddings, receptions.

GAEC Salers and Bol d'air

In Mazet-Saint-Voy, Nicolas and Lise Russier raise Salers cows, renowned for their tasty meat. Their farm, which has the “Boeuf de Haute Loire” and “Label Rouge Salers” labels, offers direct sales and farm visits.

GAEC des Beaudors

Sophie and Jean-Julien raise Montbeliarde dairy cows and sows in Tence. They are members of the “Mont lait” brand, a group of farmers in mountain areas.

Product processing: sausages, “godiveaux” for direct purchase.

Fin Gras du Mézenc is a protected designation of origin (PDO) for exceptional beef. This seasonal product, available from March 1st to June 1st, comes from cattle over 2 years old, fattened on hay rich in aromatic plants from the Mézenc and Haut-Lignon high plateaux. The meat is characterized by its fine marbling, offering unique tenderness and aromas.

Lizieux smoked trout

To complete this gourmet offering, smoked trout from the Lizieux springs add a touch of freshness. Raised in the ponds of Moulins du Bouchat, these trout are smoked by hand, preserving all their gustatory qualities.
